The 16th through 18th centuries brought more refined culinary techniques. It was during this time period that smoked meats and fish, pastry cooking, salads and green vegetables, chocolate, ice cream, wines, and juice were imported from abroad. Over the centuries, this resulted in regional cuisines based on local conditions.
